Carb info Please

Hi,

Just triked a Kawasaki 700 American import, original engine knackered so replaced engine with a GT750 engine. Carbs idling and slow running is all over the place. Screams down the road once the revs are up but seems to take a long while to settle down. Could it be dodgy diaphrams? Does anyone know what the carb settings should be or have any useful info, I'm running out of ideas fast and the M.O.T is tomorrow.

could be a number of probs.
carbs out of balance which does tend to show up more at low revs.
