i used to love Haslet when i was a kid
i tasted some not long ago...and the stuff is vile...nastiness euuukkkk
what possesed me to like it

Haslet? Yummy! A bit like Faggots and gravy, or sage and onion stuffing ,or brussels, or Marmite, or Twiglets. You either love it or hate it!

I remember something called chicklin (not sure if thats how you spell it) my dad used to cover it with vinegar and pepper and i used to sit by him waiting for some...didnt realise it was the guts of a animal till i was older.....makes me feel really sick thinking about it.... :eek:

i had haggis for the first time last year when i went upto Kelso
sort of reminded me of black pudding with gritty bits in it

I've eaten Haslet as a kid and as an adult, though not recently. You have to remember that as you grow up your tastes change and things you adored years ago can be very disappointing now, even if they taste the same. I used to hate Branston pickle as a kid, but now I could sit and eat a jarful with a spoon, especially if I've had a drink or three and have the munchies....

i think they are called chitlins NG
its the intestine of the cow,,,,all cleaned out then boiled,,,
i used to love it when i was a kid but aint been able to buy it for about 25 years? my gran used to put vinegar pepper and salt on too,,,,lurvely :p

years ago haslet was mainly spicy lamp and pork and was a brown/green colour.and had a lot in common with kebab meat
now it is usually more of a red colour and has a lot of bacon in it. and not so spicy.
it does not taste as good as it used to.
a good haggis is just that, good..
a bad haggis though tastes like kak.
a welsh delicacy which unfortunatly we are not allowed to make anymore is
"canu tarw" which means "bull ring" (no not A bulls ring)
you would sizzle fry one brummie in welsh salted butter and chopped wild garlic leaves, season to taste.
ah those old recipes were good.
if a brummie was'nt available (which is bloody rare)
you could use geordy but they needed to be boiled up for a long time first as they are a bit chewy :D

Whenever I am down in England at a rally,I always tell a local lassie when asked that I'm a professional haggis hunter,running round the mountains up here chasing them with a spear :D The number of people that believe me is unbelievable.

what about the bedfordshire clanger..
a big puff pastry roll with spicy mince, onions and potatoes one end and jam rolly polly stuck at the other..
the whole idea was that once you had eaten one end, you fire the other bit down your head strait away and hey presto, only one plate to wash up..
if you want to try it, there's a bakery in sandy, beds, that still makes them, thats if the pikies ain't trashed it again ( if so, try in 6 months)
my opion, ****e.....you try biting one end and burn your nuts when the contents of the other end pop out! maybe i should invest in a plate :D

"Chitterlings" are the critters. You can still get 'em, but it's becoming a struggle these days.

Not sure what the meat was, but it's the aspic jelly that melts (same stuff as in pork pies).

I'm a sad individual, but here's the recipie for "Brawn"
Brawn
1/2 pig's head, including the tongue but not the brains
2 pig's trotters
500g (1 lb) shin of beef
2 cloves garlic, chopped
bouquet garni
10 black peppercorns
2 tablespoons wine vinegar
salt
2 onions each stuck with 2 cloves
2 carrots, quartered
2 leeks, split
Put all the meat into a large pot. Cover with water and add garlic,
bouquet garni, peppercorns, vinegar, salt, onion, carrots, and
leeks. Bring to a boil, skim and lower heat. Cover and simmer
for 2 hours, or until meat is tender and comes easily off the bone.
Cool and pull all the meat off the bone, chopping coarsely. Set
aside.
Strain the stock and boil until reduced. Add meat and adjust
seasonings.
Cool meat and stock, pour a layer into a loaf tin. Refrigerate
until set. Sprinkle with chopped herbs, lay hardboiled eggs along
the center, and cover with more meat and stock. Refrigerate until
set. Turn out and press into toasted breadcrumbs. Eat cold with
salad, mustard, potatoes and buttered rye bread.

i shall eat them in memory of my gran, who died at the tender age of 93 and having been through wars and rationing was a genious at makin food outa total cack,,,,lol
my fav was potted meat, shin beef or stewing steak ,,half a cow heal for jelly boil it all up and set in a bowl,,,,,was like steak jelly,,,and she made brawn and tongue too,,,,,fekin delish
she also ate sweetbreads....lol...i reckon u all know what they are,,!
