Always disconect the earth first (nearly always neg these days but if you've got an old brit could be pos). This means that if your spanner touches the frame you are connecting neg to neg and will not lead to the wonderous art of spanner welding  . Once the earth is disconnected you no longer have a complete circuit so even if you touch the frame when undoing the other terminal you won't get a short (and sparks).
Always make sure that the earth lead does not touch the battery terminal when disconnecting the other terminal (the little b*ggers can often find their way back)
When reconnecting always reconnect the feed terminal first and then the earth for the same reasons.
Cheers

Thanks Chris
In the past I have guessed and sometimes noticed sparks.
